This red salt is extracted in Hawaii on the coast of the Pacific Ocean. The salt is mainly produced on the central island of Molokai, where seawater from the Pacific Ocean is evaporated by solar energy. The most common are Bamboo green, Lava black and Alaea red. The salt crystals are mixed with mineral extracts. For the red salt, these are extracts of red clay. The salt is mineralized by the volcanic soil and gets its red color from the iron oxide.

Alaea, a water-soluble colloidal ochre earth, was used for coloring salt, which in turn was traditionally used by Hawaiians to clean, purify, and bless tools, canoes, houses, and temples. Alaea salt is also used in several native Hawaiian dishes kalua pig, poke, and pipikaula. In the 19th century, Hawaiians began to produce large quantities of alaea salt using European salt-making techniques and became a major supplier to fishermen in the Pacific Northwest for salting salmon.
