Deodorizing cocoa butter

Deodorization, or deodorization, is done by steam distillation at a high temperature under vacuum. This process removes the odorants. The distillation temperature ranges from 204 to 275 °C at a vacuum of 6 mmHg.

Melting cocoa butter

To avoid crystallization when melting the cocoa butter, it is best to let it melt very gently.
